早餐breakfast由break和fast兩個(gè)詞組成。這里的fast不是形容詞“快”的意思,而是名詞,意為“齋戒、禁食”,形容漫漫長(zhǎng)夜都沒(méi)有東西吃。而早上的第一餐breakfast,也有break the fast,解禁,可以吃東西的意思。
北方:
花卷 huājuǎn、饅頭mántou (steamed breads)、燒餅shāobǐng (unleavened pocket-bread with sesame)、包子bāozi (steamed buns with meat or vegetable stuffing)、豆?jié){(soy milk)。
南方:
糍飯團(tuán)ci fan tuan、油豆腐粉絲yóu doù fu fěnsī (a soup made by fried tofu and cellophane noodles)、咸鴨蛋、咸菜、松花蛋配白粥plain rice porridge served with numerous side dishes such as salted duck eggs, pickled vegetables, and century eggs、甜漿或鮮漿配燒餅油條sweetened or savoury soy milk served with shāobǐng or yóutiáo、腸粉rice noodle rolls、炒面fried noodles、發(fā)糕fagao (rice cakes)、煎餅(thin crispy omelets with fillings folded in)、蘿卜糕lúobogāo (turnip cakes)、粽子zòngzi (another kind of rice cake wrapped in bamboo leaves)。
Hong Kong
In a Hong Kong cha chaan teng breakfasts might consist of Hong Kong-style milk tea, coffee, ham, and fried eggs, and a bowl of macaroni soup with ham. In upmarket restaurants or hotels, however, standard English and Continental breakfasts are served.
港式茶餐廳的早餐包含有港式奶茶、咖啡、火腿、煎蛋、火腿通粉。而高檔的飯店或者酒店里還會(huì)提供標(biāo)準(zhǔn)的英式和歐式早餐。
英式早餐
英國(guó)人喜歡a substantial hot meal for breakfast,英國(guó)酒店餐廳的Full English Breakfast英式早餐全餐,比其他國(guó)家的正餐還要豐富,絕非只有牛角包配果醬咖啡的歐式早餐Continental Breakfast可比。這份早餐俗稱the fry-up,因?yàn)槔锩娑嗍羌逭ǖ氖澄铮合隳csausage,腌肉bacon,蘑菇mushroom,番茄tomato。除此之外,還有土司toast,英式烤餅scone,茄汁焗豆baked beans等傳統(tǒng)食物。
吃英式早餐,雞蛋是不能少的。雞蛋通常有fried,scrambled,boiled和poached四種烹調(diào)方法。
Fried是煎,英國(guó)人煎蛋,通常只煎一面,蛋黃生生的,俗稱“太陽(yáng)蛋”,也就是美國(guó)人口中的sunny side up;Scrambled是炒;Boiled是把雞蛋連殼直接放進(jìn)水里煮,熟透的叫做hard-boiled,半熟的叫做soft-boiled;Poached是把蛋去殼后用溫水煮,煮出來(lái)的蛋內(nèi)生外熟,形狀不一。
