Czech Kolache 捷克哥拉奇 [下午茶-茶點DIY]
將酵母倒入半杯微溫的水中浸泡。 另取一只碗,將1杯牛奶,半杯糖,1茶匙鹽,半杯起酥油以及2杯篩過的面粉混合,反復(fù)擊打充分。加入2個雞蛋和酵母液,充分攪拌。靜置直到面粉起泡,變得柔軟有彈性。 加入3杯半面粉,和在一起。靜置發(fā)酵一個小時。取出面團擊打后,再發(fā)酵1個小時。 同時制作餡料:攪打兩個蛋黃,加入3湯匙白糖,1/8茶匙鹽,2湯匙中筋面粉,1杯葡萄干以及農(nóng)家干酪,攪拌均勻。 將面團掐成一個個1英寸大小的小球,按扁,在每一小球中間部位壓一道壓痕,然后將餡料填入。發(fā)酵15分鐘,然后以華氏425度(即攝氏220度)烘焙12到18分鐘直到呈金黃色。
